Our Essence
In Xochimilco, food does not begin in the kitchen.
It begins in the water. In the soil. In the chinampa.
Lame Cazuelas is a cultural-territorial project where gastronomy becomes the entry point to understanding an agricultural landscape that remains alive within one of the largest cities in the world.
We walk the market.
We navigate the canals.
We visit the chinampa.
We cook what the territory allows.
Each dish is landscape transformed.

I bet you haven't!
If you’ve already been to Xochimilco, you probably think you’ve seen it all…

About me
I’m Gabriel — a chilango, cultural mediator, and creator of Lame Cazuelas.
I grew up in Xochimilco, and for over 15 years I have worked with international travelers, exploring Mexico City through its history, its territory, and its living identity.
Thanks to Lupita, my grandmother, I came to understand that food is not just flavor — it is memory. My approach is not about showing postcards, but about offering real context.
Lame Cazuelas was born from the desire to share the real Xochimilco:
agricultural, complex, resilient, and deeply human.
Each experience is private, because conversation matters.

Three moments. One shared fire.
Market, trajinera, and kitchen. Three spaces where Xochimilco reveals itself through product, territory, and memory. We explore ingredients at their source, navigate its landscape, and bring them to a slow fire — where everything begins to make sense.
Xochimilco
Market

We walk its aisles to understand the ingredients that are born in the chinampas and make their way to the table.
Gastro-Cultural
Experience
Learn to prepare traditional dishes using local ingredients and techniques.
Then, it’s time to eat!
Traditional
Trajinera
We explore the chinampa, its lacustrine history, and its natural beauty.
Voices from those who have already experienced it
Those who have walked the market, navigated the trajinera, and cooked slowly over the fire with us share
something in common: they discovered a Xochimilco they will never forget.
“More than a tour, it was an experience that changed the way I understand Mexico.”
From the very first moment, Gabriel made us feel like guests rather than tourists. Xochimilco stopped being a colorful postcard and became a living territory — with history, memory, and cuisine with soul.
It wasn’t just about navigating the canals; it was about understanding them. It wasn’t just about tasting food; it was about meeting the people behind each ingredient. Every story had depth, and every dish had context.
The way he connects gastronomy with cultural identity is remarkable. You can tell he’s not repeating a script — he’s sharing something that is part of who he is.
Authentic, warm, intelligent, and deeply respectful of the community.
If you want a real experience in Mexico — not something superficial — this is the tour you should take.

“The best market tour I’ve taken in any country.”
I’ve visited markets in Asia, Europe, and South America, but I had never experienced one with this level of depth.
José Gabriel doesn’t just explain what we’re seeing — he teaches us how to read the market. The colors, the sounds, the everyday rituals… everything carries meaning.
We tasted ingredients I would never have chosen on my own, listened to the vendors’ stories, and came to understand how the market is the cultural heart of the neighborhood.
His knowledge is solid, but what truly makes the difference is his sensitivity. It doesn’t feel touristic. It feels intimate and genuine.
I left with a full stomach and an expanded mind.
An essential experience if you want to understand Mexico through its cuisine.
